this is a page filled with recipes that i like to cook. it's far from
exhaustive, but i often lose the recipes i cook because i only write
them on scraps of paper. there are defintely recipes on here from random
places on the internet, so i will definetly try to link back to the
originals if i can find them.
savoury
foccacia
- 2 cups all purpose flour
- 1 tsp insant yeast
- 1 tsp salt
- 1 cup warm water
- olive oil

toppings of choice, usually salt and garlic, and herbs like thyme and
rosmary

mix flour, yeast, salt and water in a bowl until dough is formed
- cover and allow to rise in fridge overnight

pour enough oik to cover base of 25x25 baking pan and transfer dough,
spreading to edges
- cover and leave to rise for another two hours at room temp
- preheat oven to 210C

after rising, pour oil onto dough and dimple the dough with finger.
sprinkle toppings of choice
- bake for 25 minutes
turmeric rice
- 1 cup rice (basmati, jasmine, white)
- 1 1/2 cups chicken stock
- 1/4 cup minced onion
- 2 tsp minced garlic
- 1 tbsp melted butter
- 2/3 cup peas
- 1/2 tsp turmeric
- 1/4 tsp salt
- 1 bay leaf
- melt butter in microwave
- wash rice

mix rice, butter, onion, garlic, turmeric, salt and bay leaf in rice
cooker
- add stock and stir
- cook

once finished, add peas and 2 tbsp water and put back on to cook
- fluff and serve

herbed chicken
note: i actually haven't made this by measuring yet, so the amount for
herbs will almost certainly change from these estimates
- 375g diced chicken (125g per person)
- 1 medium diced red onion
- 2 tbsp minced garlic
- 2 tsp thyme
- 1 tsp rosmary
- 1 tsp parsley
- 1/2 tsp oregano
- salt
- pepper
- olive oil

add oil and onion into large fry pan on medium heat and cook until
softened
- add garlic, stir for 30 seconds
- turn heat up to high and add chicken all herbs, salt and pepper

alternatively, mix the chicken, salt, pepper and herbs in a bowl
before adding to hot pan
- cook chicken until browned
- usually served with side of rice or salad
palestinian salad
- 1 small red onion
- 1 cucumber
- 250-300g cherry tomatoes
- 1 tbspolive oil
- 1 1/2 tsp lemon juice
- 1/2 tbsp minced garlic
- 1 1/2 tsbps chopped parsley
- salt
- pepper
- the smallest pinch of white sugar
- diced onion, halve then slice a cucumber and halve the tomatoes
- mix together in a bowl
- combine oil, garlic, lemon, sugar, salt, pepper and parsley and pour dressing onto salad
i suppose this salad might possibly be more of a general medertrainian
salad, but i first learnt this recipe from a palestinian creator on
tiktok, so their country gets all the credit. my apologies to any
greeks who might get offended :P
sweet
coconut macaroons
- 350g coconut, shredded
- 1 can sweetened condensed milk
- 2 egg whites
- vanilla extract
- 100g dark chocolate
- mix coconut, vanilla and condensed milk
- beat egg whties until stiff
- fold egg whites into coconut mix
- cook 20 minutes at 170C
- allow to cool
- melt dark chocolate in microwave
- dip macaroon base into chocolate and leave to dry
makes 21
apricot and coconut loaf
- 2 cups all purpose flour
- 1 1/3 cups raw sugar
- 2 cups coconut, half dessicated, half shredded
- 3 tsp baking powder
- 1 1/2 cups milk
- 175g dried apricots, diced
- 1 egg
- 50g melted butter
- salt
- soak apricots in milk for 20-30 minutes
- mix flour, sugar, coconut, baking powder and pinch of salt
- combine milk, egg and butter
- mix wet ingredients into dry
- pour into lined loaf tin
- bake at 160C for 1 hour
blueberry muffins
- 195g all purpose flour
- 150g white sugar
- 2 tsp baking powder
- 1 egg
- 80-120mL milk
- 100g butter, melted (80mL oil)
- 250g blueberries
- salt
- vanilla extract
- 1 tsp cardamom
- 1 tsp cinnamon
- combine dry ingredients in small bowl
- combine butter and egg in large bowl

take turns folding in dry ingredients and milk, finishing the dry
first
- fold in blueberries
- spoon evenly into lined or grease muffin tin
- bake at 200C for 15-20 minutes
blueberry cobbler
- 170g butter
- 1 1/2 cups all purpose flour
- 1 1/2 cups white sugar
- 2 1/2 teaspoons baking powder
- 1 tsp cardamom
- 3 cups blueberries
- 1 1/2 cups milk
- salt
- melt 120g of butter in microwave
- whisk milk and butter together

mix together flour, baking powder, 1 1/4 cups of sugar, cardamom and
salt
- mix wet ingredients into dry ingredients
- stir blueberries and 1/4 cup of sugar
- place 50g of butter in 25x25 baking pan and melt in oven
- take tray out of oven and pour batter in
- spoon blueberries on top of batter
- bake at 170C for 45 minutes
- serve with ice cream
